🍲 Pradeep's Moroccan‑Style Beef & Sweet Potato Tagine

Slow‑cooker comfort infused with warm spices, sweet potatoes, chickpeas & dried fruit


🛒 Ingredients

Spice Rub & Meat

  • 2 Tbsp flour
  • 2 tsp turmeric
  • 2 tsp kosher salt
  • 2 tsp fresh‑ground pepper
  • 2 tsp cinnamon
  • 2 tsp chili powder
  • 1½ lb beef or lamb stew meat, cubed (½″)

Aromatics & Liquids

  • 2 onions, chopped
  • 6 garlic cloves, minced
  • 2 Tbsp ginger, minced
  • Zest & juice of 1 navel orange
  • 2 tsp oregano; 1 tsp chili flakes
  • 2 cups beef broth; 1 cup red wine (optional)
  • 1 (14.5 oz) can diced tomatoes

Veg & Legumes

  • 2 cups sweet potato (yam), cubed
  • 2 (15 oz) cans chickpeas, drained
  • ½ cup dates, halved; ¼ cup dried apricots, chopped

Finish

  • 1 cup fresh cilantro, chopped

👩‍🍳 Instructions

  1. Brown the Beef with Spice Rub
    Toss meat in the spice mix. Sear in a hot skillet 2–3 min per side. Transfer to slow cooker and deglaze skillet with a splash of broth—scraping up the flavorful fond.

  2. Sauté Aromatics & Toast Spices
    In the same skillet, cook onions, garlic, and ginger until soft. Stir in the remaining spices and chili flakes until fragrant (1–2 min), then deglaze with 1 cup broth and pour everything into slow cooker.

  3. Layer for Even Cooking
    Place sweet potatoes at the bottom, followed by meat, tomatoes, then chickpeas and dried fruit on top. Add remaining broth and wine.

  4. Cook Low & Slow
    Cover and cook on LOW for 6–8 hrs (or HIGH for 4–5 hrs) until meat is tender and vegetables are cooked through. Avoid opening lid during cooking.

  5. Finish with Brightness
    In the final 30 minutes, taste and adjust seasoning. Stir in cilantro and a squeeze of orange or lemon juice for freshness.
