Brown the Beef with Spice Rub
Toss meat in the spice mix. Sear in a hot skillet 2–3 min per side. Transfer to slow cooker and deglaze skillet with a splash of broth—scraping up the flavorful fond. -
Sauté Aromatics & Toast Spices
In the same skillet, cook onions, garlic, and ginger until soft. Stir in the remaining spices and chili flakes until fragrant (1–2 min), then deglaze with 1 cup broth and pour everything into slow cooker. -
Layer for Even Cooking
Place sweet potatoes at the bottom, followed by meat, tomatoes, then chickpeas and dried fruit on top. Add remaining broth and wine. -
Cook Low & Slow
Cover and cook on LOW for 6–8 hrs (or HIGH for 4–5 hrs) until meat is tender and vegetables are cooked through. Avoid opening lid during cooking. -
Finish with Brightness
In the final 30 minutes, taste and adjust seasoning. Stir in cilantro and a squeeze of orange or lemon juice for freshness.
