๐Ÿ‹ Pradeep’s Moroccan Chicken Tagine 

This fragrant Moroccan-inspired chicken tagine balances warm spices, tender chicken, and sweet dried fruits. It’s simple enough for weeknights yet elegant for a dinner party. 

๐ŸŒถ️ Spice & Aromatic Ingredients

  • 2 tbsp salt (or more to taste)
  • 2 tbsp freshly ground black pepper
  • 4 tbsp chopped fresh ginger
  • 3 tbsp curry powder (or Ras el Hanout for a more authentic Moroccan flavor, if available)
    • Note: If using Ras el Hanout, stick to 2 tbsp since it’s more intense than standard curry powder
  • 1 tbsp ground cinnamon
  • 1 tbsp ground cardamom
  • 1 tbsp cayenne pepper
  • 12 large garlic cloves, thinly sliced
  • Zest from 1 lemon (or ½ preserved lemon, finely chopped, for a traditional touch)

๐Ÿ— Protein & Base Components

  • 12 large chicken thighs, preferably bone-in and skin removed
  • 6 tbsp olive oil
  • 4 cups sliced onions
  • 1 cup fat-free, low-sodium chicken broth
  • 1 cup red wine (or substitute with more chicken broth and a splash of fresh orange juice for a wine-free option)
  • 1 (8-oz) can diced tomatoes
  • 16 pitted dates, halved
  • ½ cup golden raisins and dried apricots

1️⃣ Prep. & Sear the Chicken
Preheat oven to 350°F (175°C). Season chicken thighs with salt and black pepper. Heat olive oil in a large oven-safe pan over medium-high heat. Sear chicken for 4 minutes per side until golden brown. Remove and set aside.

2️⃣ Build the Flavor Base
Add sliced onions to the same pan and cook over medium heat for 10–12 minutes, stirring often, until deeply golden and caramelized. This step adds natural sweetness to the dish.

Stir in ginger, curry powder (or Ras el Hanout), cinnamon, cardamom, cayenne, and sliced garlic. Cook for 1 minute until aromatic.

3️⃣ Combine & Bake
Return chicken to the pan. Add chicken broth, red wine (or substitute), diced tomatoes, dates, raisins/apricots, and lemon zest (or preserved lemon). Bring to a gentle boil.

4️⃣ Oven Bake
Cover the pan and transfer to the preheated oven. Bake for 40 minutes, or until the chicken is tender and cooked through.

5️⃣ Serve & Enjoy
Serve hot over couscous, basmati rice, or with warm crusty bread. Garnish with toasted almonds or sesame seeds for added texture.
